Colombia Las Flores Chiroso
The very first of the series we have to offer is a rare Chiroso varietal from Finca Las Flores in Colombia! This varietal has been relatively unknown until recent couple of years. It was initially assumed to be related to the Caturra varietal, but recent genetic studies have linked it to Ethiopian Landrace varietals. The exact heritage of it and how it made its way from Ethiopia to Colombia is still a mystery, which makes this varietal even more intriguing. The word Chiroso is a Colombian slang which means elongated, which local farmers gave to this varietal to describe the shape of the bean. It is most commonly found in the Urrao region of Antioquia in Colombia. This particular lot we have from Finca Las Flores is a anaerobic washed processed coffee with thermal shock, it comes with a fascinating white peppery note!
Finca Las Flores in huila is run by three brothers headed by Johan. Always dedicated to exploring new varietals and adventurous to push forward the flavour frontier for the better, we reckon this particular lot with a unique thermal shock at 50°C is a justified representation of what Johan and team thrives at. Aroma of muscat grape, ginger lily and white pepper wafts through the air the moment you open the bag. Citrus chai when enjoyed hot then the fish sauce slowly comes through (in a good way) as it cools down. This is such a fun coffee and we are just thrilled for you to try.
